Jackfruit Curry

Jack fruit is becoming increasingly common in many different dishes. It is often used in Sri Lanka - where food is pivotal to their social life. We have a foolproof recipe that will make you, your family and your friends happier with every mouthful.

You’ll need:

  • 1 tsp cumin seeds

  • 1 tsp coriander seeds

  • 10 curry leaves or ½ tsp fenugreek seeds

  • ½ tsp fennel seeds

  • 1 cinnamon stick

  • 1 tsp mustard seeds

At low, medium heat, fry the spices with no oil for around 2 minutes. In the meantime, prepare:

  • 1 medium-sized onion chopped 

  • 3-4 cloves of garlic roughly chopped

  • 1-2 green chillies chopped

Add with the spices and fry onion, garlic & chillies until lightly browned while preparing…

  • 1 can jack fruit drained and chopped into bite-size pieces (if not already)

Add and fry the jack fruit and fry while stirring.

  • ⅔ can coconut milk

  • 1½ tsp turmeric

Add them and simmer for around 8 minutes. Add water if it gets too thick.

Let cool and sit for at least an hour, preferably 8 hours. 

To serve:

  • White rice &/or flatbread

  • A handful of coriander (~10g)

  • Teriyaki shallots (optional)
