Szechuan Green Beans

You’ll need:
2 tbsp sesame oil or vegetable oil
200g green beans
Heat up the oil and fry the beans until they’re scorched on the outside and start to soften. This should take around 3-4 minutes. Add:
100g chestnut or shiitake mushrooms finely diced
4 spring onions chopped (set aside the green bits for dressing)
1 tbsp ginger finely chopped
1 tsp garlic finely chopped
1 tbsp toban djan sauce or gochujang (for gluten-free)
Stir in ingredients, and turn down the heat if you start choking from the chilli
1 tbsp Tamari or Soy Sauce
1 tbsp Black Vinegar or any alt. Vinegar
To serve:
White rice
Sesame seeds (optional)
Spring onion, the green parts chopped finely for garnish
