Szechuan Green Beans

Szechuan is a style of Chinese cooking that is spicy, oily and peppery. Here is our recipe for this simple, quick and easy dish that will leave you only wanting more…

You’ll need:

  • 2 tbsp sesame oil or vegetable oil

  • 200g green beans

Heat up the oil and fry the beans until they’re scorched on the outside and start to soften. This should take around 3-4 minutes. Add:

  • 100g chestnut or shiitake mushrooms finely diced

  • 4 spring onions chopped (set aside the green bits for dressing)

  • 1 tbsp ginger finely chopped

  • 1 tsp garlic finely chopped

  • 1 tbsp toban djan sauce or gochujang (for gluten-free)

Stir in ingredients, and turn down the heat if you start choking from the chilli

  • 1 tbsp Tamari or Soy Sauce

  • 1 tbsp Black Vinegar or any alt. Vinegar

To serve:

  • White rice

  • Sesame seeds (optional)

  • Spring onion, the green parts chopped finely for garnish
