Thai Larb Salad

Larb is a type of Lao cooking, usually using beef - but as you’ll probably guess we have made a recipe where it tastes just as good, and you can use an alternative. Thai Larb salad is refreshing and easy to make.

You’ll need:

  • 250g mince (I used beyond beef)

Fry the mince, and make sure it’s broken apart. Set aside.

Then…

  • 2 shallots thinly sliced

  • ½ handful of mint chopped

  • ½ handful of coriander chopped

  • 1½ tbsp of soy sauce or fish sauce

  • Juice of 1 large lime

  • 2 spring onions thinly diced

  • 40g chia seed

  • ¼ tsp of salt

  • 1 tsp chilli flakes (optional)

In a mixing bowl first mix the mince, shallots, spring onions and lime, followed by the coriander, soy or fish sauce, chia, salt and chilli. Mix till ingredients are consistently dispersed.

To Serve:

  • 2 cos lettuce or 1 romaine lettuce leaf

  • Chilli flakes (optional)

Pick off all the leaves of the lettuce and spoon a portion of the mince mixture onto a lettuce leaf, sprinkle rice dust and chilli flakes.

Repeat this process til you have used up the mix!
