Sri Lankan Masala

Kept in an airtight container, this spice mix will remain fresh for around 3-4 months. After a period of time, spice mixes (masala) will turn bitter and spoil your food.

You’ll need:

  • 2 tsp coriander seeds

  • 2 tsp cumin seeds

  • 1 tsp black pepper

  • 2 cloves

  • 8 cardamom seeds spilt the pods and only use the seeds

  • ½ tsp fennel seeds

  • 1 cinnamon stick

Toast the spices on medium heat for a couple of minutes (optional)

Blend in a spice grinder, blender, food processor or hand grind in a pestle and mortar.
