Mustard Gherkins

12-15 small cucumbers sliced lengthways around 3mm
Stuff the cucumber into a large 500ml jar or container as tightly as possible.
65g sugar
2 tsp mustard seeds
100ml vinegar - rice vinegar or apple cider vinegar
150ml water
Pour the liquid contents into the mason jar. Dissolve the sugar by shaking the jar.
Leave to sit at room temperature for at least 48 hours.
