Mustard Gherkins

Gherkins are very nutritious, especially when pickled! Full of probiotics which are amazing for your gut health, here’s our take on how to make this superfood…

  • 12-15 small cucumbers sliced lengthways around 3mm

Stuff the cucumber into a large 500ml jar or container as tightly as possible.

  • 65g sugar

  • 2 tsp mustard seeds

  • 100ml vinegar - rice vinegar or apple cider vinegar

  • 150ml water

Pour the liquid contents into the mason jar. Dissolve the sugar by shaking the jar.

Leave to sit at room temperature for at least 48 hours.
