Kimchee Jjigae Stew
1 tsp sesame oil or any alternative oil
3 spring onions (white parts) finely chopped (save the green parts for garnishing)
1 medium onion sliced
4 cloves garlic finely chopped
15g ginger finely chopped
In a large pan, fry the onions, ginger and garlic until browned.
Next add:
500g kimchi cut into bite-size pieces
100ml kimchi juice/brine
1 tsp salt
2 tsp sugar
1 tsp gochujang or toban djan
2 vegetable stock cubes
500ml water
Boil the ingredients and leave to simmer for at least 15 minutes.
To serve:
Seared tofu sliced into bite-sized chunks
Noodle
Miso mushrooms
