Kimchee Jjigae Stew

  • 1 tsp sesame oil or any alternative oil

  • 3 spring onions (white parts) finely chopped (save the green parts for garnishing)

  • 1 medium onion sliced

  • 4 cloves garlic finely chopped

  • 15g ginger finely chopped

In a large pan, fry the onions, ginger and garlic until browned.

Next add:

  • 500g kimchi cut into bite-size pieces

  • 100ml kimchi juice/brine

  • 1 tsp salt

  • 2 tsp sugar

  • 1 tsp gochujang or toban djan

  • 2 vegetable stock cubes

  • 500ml water

Boil the ingredients and leave to simmer for at least 15 minutes.

To serve:

  • Seared tofu sliced into bite-sized chunks

  • Noodle

  • Miso mushrooms
