Peri-Perinesca
Like pineapple on pizza. This is very traditional Italian dish.
Boil the pasta:
1L water
20g salt
400g pasta
Boil as per the packet’s instructions or desired dente. Next, the sauce!
You’ll need:
1 tsp cumin seeds
1 tsp coriander seeds
Toast the spices in a dry pan and then add:
3 cloves of garlic roughly chopped
1 onion roughly chopped
Fry the garlic and onion in the toasted spices until browned. Then add:
100g cherry tomatoes
½ tsp ground cinnamon or ½ a cinnamon stick
1-3 tsp chipotle (flakes or paste) or smoked paprika
1½ tsp sugar (I used jaggery)
½ lemon zest & juice
2 tbsp soy sauce or tamari
1 tsp vinegar (I used black vinegar)
50ml tomato paste
Simmer all the ingredients for around 10 minutes. Now mix together the pasta, sauce, and chopped coriander and serve!
N.B You can also add 200g of Meatballs rolled into 1” balls (optional)
Fry the meatballs in a frying pan until browned on a few sides.
Add perinesca sauce and pasta on top with a bit of pasta water.
