Bolognese Sauce

This Asian-inspired Anglo-Italian is far better than the original, in my opinion! You can easily bulk make this recipe and freeze it to use for many different dishes. This recipe serves 3-4 people.

You‘ll need:

  • 1 tbsp olive oil

  • 1 onion finely chopped

  • 4 cloves garlic finely chopped

  • 200g mince or homemade tempeh

  • 1½ tsp dried oregano

Fry the onion, garlic, oregano and mince in high heat while breaking apart the mince. Then add the onions, and once the onions are browned, add…

  • 200g mushrooms chopped into bite-sized slices 

  • 2 tbsp tamari or soy sauce

  • 2 tbsp black vinegar or balsamic

  • 100ml red wine or white wine

Turn up the heat and start reducing the liquid.

Then add..

  • 1 can of chopped tomatoes

  • 1 tbsp tomato puree (optional)

  • 1 tsp sugar

  • 1-5 tsp chilli flakes/cayenne pepper (optional)

Cook for around 5 minutes or until the sauce has thickened.

Serve with:

  • Pasta of your choice, around 70g per person

  • Nutritional yeast sprinkled on top

  • Fresh basil leaves
