Bolognese Sauce
This Asian-inspired Anglo-Italian is far better than the original, in my opinion! You can easily bulk make this recipe and freeze it to use for many different dishes. This recipe serves 3-4 people.
You‘ll need:
1 tbsp olive oil
1 onion finely chopped
4 cloves garlic finely chopped
200g mince or homemade tempeh
1½ tsp dried oregano
Fry the onion, garlic, oregano and mince in high heat while breaking apart the mince. Then add the onions, and once the onions are browned, add…
200g mushrooms chopped into bite-sized slices
2 tbsp tamari or soy sauce
2 tbsp black vinegar or balsamic
100ml red wine or white wine
Turn up the heat and start reducing the liquid.
Then add..
1 can of chopped tomatoes
1 tbsp tomato puree (optional)
1 tsp sugar
1-5 tsp chilli flakes/cayenne pepper (optional)
Cook for around 5 minutes or until the sauce has thickened.
Serve with:
Pasta of your choice, around 70g per person
Nutritional yeast sprinkled on top
Fresh basil leaves
